Liquid nitrogen (-196°C) is used in a variety of biological applications including the cryo-preservation of products in ideal conditions that, in fact, respect and protect the different cellular structures and enzymatic systems. The extreme cold blocks or puts to sleep the products in order to safely store them for long periods of time and eventually warm them up to their original functioning state.
